FROM BUD TO BOTTLE: SEYVAL
Harvest has been abundant this year, and almost all the grapes should be off the vines in a few short weeks, save for some of the Vidal and Chambourcin which we'll save for the ice wine harvest in the depths of winter.
We recently harvested Seyval grapes, some of which were picked by hand and then flash- frozen to preserve flavors and aromas for what will eventually be a new vintage of our Hand-Picked Seyval Blanc (currently sold out). In addition to our traditional dry and crisp Seyval Blanc, these grapes are used to make our Chautauqua Rouge, Cream Sherry, and Old Oak Gold. How many have you tried?
