Quince trees (Cydonia olonga), of the apple or "pome" family, are native to the Causcasus mountains of Georgia, but we have an abundant orchard of them at Johnson Estate. Our quince harvest is used to make this authentic Spanish-style quince paste. Consider it sliceable jam to pair with a variety of cheeses and wines.
