Perfect with an off-dry white wine such as Johnson Estate’s Seyval Blanc.
  • 1 small garlic clove
  • 1/4 tsp dry mustard
  • 1/4 tsp dried savory
  • 1/4 tsp dried tarragon
  • 1/4 tsp dried thyme
  • 1 tbsp white wine vinegar
  • 1/4 cup olive oil
  • 2 tbsps minced green onion
  • 2 tbsps minced parsley
  • salt and pepper
  • good quality Manchego, Parmesan Reggiano, or aged Gouda

Mix all ingredients thoroughly. Drizzle over favorite combination of greens. Try it with spinach, sliced fennel and red pepper. Garnish with fine slivers of aged cheese.
