These brownies - which I have been making since childhood, although not much recently - have been reinvigorated with a bit less sugar and the addition of the region's specialty, Concord. A peanut butter brownie with ground flax seed, chia, and oatmeal. Now may we call it healthy? Serve with Concord or Chautauqua Rouge
Ingredients
  • 1/2 tsp baking soda
  • 1 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 cup peanut butter, creamy or crunchy, your choice
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 cup white flour
  • 1/2 cup whole wheat four
  • 1 cup oatmeal (organic)
  • 1/2 cup ground flax seed, regular or golden
  • 1 cup Grower's Concord Grape Pie Filling
  • 3 tbsps chia seeds
  • 4 tbsps Concord grape juice
Directions

For the Batter:
Cream the butter and sugar in a blender and then add the eggs and continue to beat. When creamy, add the peanut butter, baking soda, salt, and vanilla. Stir all of the dry ingredients together and then add to the batter, stirring gently.

For the Concord Grape Swirl:
Let the chia seeds soak in four tablespoons Concord grape juice. When plump, add them to the Concord grape filling.

Assembly:
Spread the batter in a 9" baking pan (with parchment on the bottom if you like). Then drizzle the Concord grape filling on top and using a knife, swirl into the batter.
