

The Estate's Rieslings have been harvested and are now being fermented to make the 2025 vintage. That makes us think of the Germanic tradition of "Fedderweisser" - celebrating the fall harvest with partially fermented, low-alcohol Rieslings.  And of the food pairings that complement our FOUR different Rieslings:  Black Locust, Dry, Semi-Dry, and Sweet. 
Here's some pairings for a "Riesling-Only" supper. 
And remember that Riesling has a special fondness for the sweetness found in corn;
featured in a couple of these recipes.
Black Locust Dry Riesling:     Monk's Parmesan Crisps 
Dry Riesling:                           Spanish Blue Potato Frittata  
                                                FlammeKuchen (German Onion Pizza - pictured above) 
Semi-Dry Riesling:                  Corn Bisque with Smoked Shrimp or Bacon
                                                Corn Fritters with Arugula
Sweet Riesling:                        Lemon Cheesecake Tart
