Pair of Holiday Mulled Wines
Founder, Fred Johnson, was inspired to produce these spiced wines, when some industrious hobbyists launched the historically correct 16th century merchant vessel, the Sea Lion, in 1985 in Westfield. The ship sank in 1999, but was raised and what is left of it is now in the Barcelona Harbor.
The wines have fared better - and for over thirty years have been a fall and winter favorite most particularly at Johnson Estate. Ipocras, derived the Hippocrates, uses the same 'precious' spices which were used in old England - cinnamon, cloves, and ginger among others - to create a beverage which was originally intended for nobility. We serve both the White and Red Ipocras slightly warm in the winery during the fall months.
Red Ipocras is delicious as a pairing for pumpkin pie, for poaching pears, or even for glazing ham. It makes a delicious warm punch with apple cider.
White Ipocras, with more ginger, is delicious with spice cake and other desserts. May also be served with ice and ginger ale.
